Make this quick, refreshing watermelon smoothie with strawberries for a cool, naturally sweet drink perfect for summer hydration or a light breakfast.

  • 3 cups fresh watermelon, cubed (frozen works best for creaminess)
  • 1 cup frozen strawberries
  • 1/2 cup vegan yogurt (or Greek yogurt for non-vegan)
  • 1 tablespoon fresh lime juice
  • 1/2 cup water or coconut water (adjust for desired thickness)

Instructions

  1. Prepare your fruit: Cube the watermelon and freeze it for at least 2 hours if you are not using pre-frozen watermelon. Measure out the frozen strawberries.
  2. Place the cubed watermelon, frozen strawberries, vegan yogurt, and lime juice into your blender.
  3. Pour in the water or coconut water. Start with 1/2 cup.
  4. Secure the lid and blend on high speed until the mixture is completely smooth and creamy. Stop and scrape down the sides if necessary.
  5. If the smoothie is too thick, add more liquid, one tablespoon at a time, until you reach your preferred consistency.
  6. Pour immediately into glasses and serve this light and cool drink.

Notes

  • For an extra boost of protein, add 1 scoop of unflavored or vanilla protein powder before blending.
  • If you want a lower-calorie fruit smoothie, use only watermelon and skip the strawberries, increasing the watermelon quantity slightly.
  • To achieve a restaurant-style creamy texture, ensure at least one fruit component is frozen.
