  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1/2 cup tahini
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic, minced
  • 1/4 cup ice water, plus more as needed
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil, for serving
  • Pinch of paprika, for garnish

Instructions

  1. Place the rinsed chickpeas, tahini, lemon juice, minced garlic, cumin, and salt into a food processor.
  2. Process the mixture for 1 minute, scraping down the sides as needed.
  3. With the food processor running, slowly stream in the 1/4 cup of ice water. The mixture will thicken initially.
  4. Continue processing for 3 to 5 minutes, stopping to scrape down the sides every minute, until the hummus becomes very smooth and light. Add a tablespoon of additional ice water if the mixture seems too thick.
  5. Taste and adjust salt or lemon juice as necessary.
  6. Transfer the smooth hummus to a shallow serving bowl. Use the back of a spoon to create a swirl pattern on the surface.
  7. Drizzle with olive oil and sprinkle with paprika before serving.

Notes

  • For the smoothest texture, remove the skins from the chickpeas before processing.
  • Using ice water helps create a lighter, fluffier hummus texture.
  • This tahini dip recipe tastes best when allowed to sit for 30 minutes before serving.
