Make this easy Snickerdoodle Cobbler for a warm, gooey cinnamon-sugar dessert that tastes like your favorite cookie baked into a comforting cobbler. It is simple to prepare and perfect for any gathering.

  • 1 cup all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ cup milk
  • For the Topping:
  • ½ cup granulated sugar
  • 1 tablespoon ground cinnamon
  • ½ cup (1 stick) cold unsalted butter, cut into small pieces
  • Optional: 1 can (21 ounces) apple pie filling or 1 cup sliced apples

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8 inch baking dish.
  2. In a medium bowl, whisk together the flour, baking powder, and salt for the base.
  3. In a separate large bowl, whisk the melted butter, 1 cup granulated sugar, egg, and vanilla extract until combined.
  4. Stir the 1 teaspoon of cinnamon into the wet ingredients.
  5. Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
  6. If you are using fruit, spread the apple pie filling or sliced apples evenly over the bottom of the prepared baking dish.
  7. Pour the batter gently over the fruit layer, spreading it lightly if needed.
  8. In a small bowl, mix the ½ cup topping sugar with the 1 tablespoon topping cinnamon.
  9. Sprinkle the cinnamon-sugar mixture evenly over the batter.
  10. Dot the top of the batter with the small pieces of cold butter.
  11. Bake for 35 to 40 minutes, or until the top is golden brown and a toothpick inserted near the center comes out clean or with moist crumbs attached.
  12. Let the Snickerdoodle Cobbler cool slightly before serving warm, ideally with vanilla ice cream or whipped cream.

Notes

  • For a richer flavor, substitute the melted butter in the base with browned butter.
  • If you want a cream cheese layer, place small dollops of softened cream cheese over the batter before adding the cinnamon-sugar topping.
  • This dessert is excellent served warm; reheating individual portions in the microwave works well.
