  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

  • 1/2 cup brown sugar, packed
  • 1 tablespoon ground cinnamon
  • 1 tablespoon granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan, or line it with parchment paper.
  2. In a large bowl, mix the mashed bananas, melted butter, 3/4 cup granulated sugar, egg, and vanilla extract until combined.
  3. In a separate bowl, whisk together the flour, baking soda, salt, and 1 teaspoon of cinnamon.
  4. Add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
  5. Stir in the sour cream or yogurt until the batter is smooth.
  6. Prepare the cinnamon sugar topping: In a small bowl, mix the brown sugar, 1 tablespoon granulated sugar, and 1 tablespoon cinnamon thoroughly.
  7. Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture evenly over the batter.
  8. Gently spoon the remaining batter over the first layer. Sprinkle the remaining cinnamon sugar mixture over the top. You can use a knife to gently swirl the topping into the top layer of batter if desired.
  9. Bake for 50 to 65 minutes, or until a wooden skewer inserted into the center comes out clean. Baking time varies by oven.
  10. Let the loaf cool in the pan for 10 minutes before carefully removing it to a wire rack to cool completely.
