Make this easy, hearty Slow Cooker Buffalo Chicken Chili for a comforting, flavorful meal. The slow cooker handles the work, leaving you with tender chicken, spicy buffalo sauce, and creamy beans perfect for game day or weeknights.

  • 1.5 kg boneless, skinless chicken breasts or thighs
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (15 ounce) can corn, drained
  • 1 (10 ounce) can diced tomatoes with green chilies, undrained
  • 1 (4 ounce) can diced green chilies, undrained
  • 1 cup (240 ml) buffalo wing sauce (use your preferred heat level)
  • 1 packet (1 ounce) ranch seasoning mix
  • 1 (8 ounce) package cream cheese, cubed
  • 1 cup (240 ml) chicken broth
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder

Instructions

  1. Place the raw chicken breasts or thighs into the basin of your slow cooker.
  2. Pour the buffalo wing sauce, chicken broth, ranch seasoning mix, cumin, and garlic powder over the chicken.
  3. Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the chicken is fully cooked and tender.
  4. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker.
  5. Add the drained and rinsed black beans, kidney beans, and corn, along with the undrained diced tomatoes with green chilies and diced green chilies. Stir to combine.
  6. Add the cubed cream cheese. Stir occasionally until the cream cheese melts and the chili becomes creamy. This may take 20 to 30 minutes on the low setting.
  7. Taste and adjust seasonings if needed before serving. Serve hot with your favorite toppings.

Notes

  • For a thicker chili, remove about 1 cup of the liquid mixture before adding the cream cheese, then mix 2 tablespoons of cornstarch with the liquid and stir it back into the slow cooker until thickened.
  • Shredded rotisserie chicken works well if you need to reduce the cooking time significantly.
  • Top this hearty comfort food with blue cheese crumbles, sour cream, or chopped green onions.
