Prepare these easy shrimp tacos quickly for a fresh, satisfying meal that signals the start of your weekend relaxation.

Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 12 small corn tortillas
  • 1 cup shredded cabbage
  • 1/2 cup fresh cilantro, chopped
  • 1 avocado, sliced
  • Lime wedges, for serving

Instructions

  1. In a bowl, toss the shrimp with olive oil, lime juice, chili powder, cumin, and salt. Let it marinate for 5 minutes.
  2. Heat a large skillet over medium-high heat. Add the marinated shrimp in a single layer.
  3. Cook the shrimp for 2 to 3 minutes per side until pink and opaque. Do not overcook.
  4. Warm the corn tortillas according to package directions, either in a dry skillet or wrapped in a damp paper towel in the microwave.
  5. Assemble the tacos: place a portion of cooked shrimp onto each warm tortilla.
  6. Top the shrimp with shredded cabbage, chopped cilantro, and sliced avocado.
  7. Serve immediately with lime wedges on the side for squeezing over the top.

Notes

  • For extra flavor, you can quickly toast the corn tortillas directly over a low gas flame for about 15 seconds per side.
  • This recipe works well for a taco party aesthetic when served buffet style.
  • Use fresh lime juice for the best bright flavor in your shrimp marinade.
