  • 1 cup breadcrumbs
  • 1 large egg, lightly beaten
  • 1/2 cup milk
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil (for stuffing)
  • 8 oz cremini mushrooms, finely chopped
  • 1/4 cup finely chopped fresh parsley
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 1/4 cup beef broth
  • For the Glaze: 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a large baking sheet.
  2. In a large bowl, combine the ground beef, breadcrumbs, egg, milk, onion, garlic, Worcestershire sauce, thyme, salt, and pepper. Mix gently with your hands until just combined; do not overmix.
  3. Prepare the savory mushroom stuffing: Melt butter in a skillet over medium heat. Add chopped mushrooms and cook until they release their moisture and brown, about 8 minutes. Add beef broth and cook until liquid evaporates. Remove from heat and stir in parsley and Parmesan cheese.
  4. Divide the meat mixture in half. On a sheet of parchment paper, shape the first half into a large ring or wreath shape, about 10 inches in diameter, leaving a hole in the center.
  5. Spoon the mushroom stuffing evenly over the center of the meat ring.
  6. Take the second half of the meat mixture and carefully place it over the stuffing, sealing the edges completely to enclose the filling inside the wreath structure. Gently reform the wreath shape.
  7. Prepare the glaze by whisking together ketchup, brown sugar, and apple cider vinegar. Brush half of the glaze over the top and sides of the meatloaf wreath.
  8. Bake for 45 minutes. Remove from the oven, brush with the remaining glaze, and bake for another 10 to 15 minutes, or until the internal temperature reaches 160 degrees Fahrenheit.
  9. Let the meatloaf rest for 10 minutes before slicing and serving.
