1 pound breakfast sausage, cooked and drained
1 (8 ounce) package cream cheese, softened
1 (10 ounce) can diced tomatoes and green chilies (Rotel), undrained
1 cup shredded sharp cheddar cheese (optional addition)
1/4 cup heavy cream (optional addition)
Instructions
Cook the breakfast sausage in a large skillet over medium heat until fully browned. Drain off all excess grease.
Reduce the heat to low. Add the softened cream cheese and the can of diced tomatoes and green chilies (with their liquid) to the skillet with the sausage.
Stir continuously until the cream cheese melts and the mixture is smooth and fully combined.
If using, stir in the shredded cheddar cheese and heavy cream until the cheese melts and the dip is creamy.
Keep the dip warm over very low heat, stirring occasionally, or transfer it to a slow cooker set to the ‘Keep Warm’ setting.
Serve this warm appetizer immediately with tortilla chips, crackers, or vegetable sticks.
Notes
For slow cooker preparation, combine all ingredients in the slow cooker and cook on low for 1 to 2 hours, stirring occasionally until hot and smooth.
You can substitute Velveeta cheese for the cheddar cheese for an even smoother texture.
