Ingredients
Scale
15 ounces whole milk ricotta cheese, drained if very wet
2 tablespoons extra virgin olive oil
1 clove garlic, minced very finely
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
2 tablespoons hot honey (or regular honey plus a pinch of red pepper flakes)
1 teaspoon fresh thyme leaves (optional, for garnish)
Instructions
Place the drained ricotta cheese, olive oil, minced garlic, salt, and pepper into a food processor or a high-powered blender.
Process the mixture for 1 to 2 minutes, stopping to scrape down the sides as needed, until the dip is completely smooth, light, and airy.
Transfer the whipped ricotta dip to a shallow serving bowl. Use the back of a spoon to create swirls or a well in the center.
Drizzle the hot honey evenly over the top of the dip.
Garnish with fresh thyme leaves, if using.
Serve immediately with crusty bread, crackers, or fresh vegetables for an easy appetizer recipe.
Notes
For the creamiest texture, ensure your ricotta is well-drained before blending. Press it gently between paper towels if necessary.
If you do not have a food processor, you can use a hand mixer, but this may take slightly longer to achieve the light, whipped consistency.
This dip is excellent as a savory ricotta spread or a light cheese dip.
