Prepare this easy, one-pan sweet potato skillet dinner in under 40 minutes. This recipe uses ground turkey and Tex-Mex flavors for a hearty, simple weeknight meal that minimizes cleanup.

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 medium onion, chopped
  • 2 cups sweet potatoes, peeled and diced into 1/2 inch pieces
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup frozen corn
  • 1/2 cup water or chicken broth
  • 1/2 cup shredded cheddar or Monterey Jack cheese (optional)

Instructions

  1. Heat the olive oil in a large (10 or 12-inch) skillet over medium-high heat.
  2. Add the ground turkey to the skillet. Cook, breaking it up with a spoon, until browned, about 5 to 7 minutes. Drain off any excess grease.
  3. Add the chopped onion and diced sweet potatoes to the skillet with the turkey. Cook for 5 minutes, stirring occasionally, until the onion softens slightly.
  4. Stir in the chili powder, cumin, garlic powder, salt, and pepper. Cook for 1 minute until fragrant.
  5. Pour in the water or broth, then add the rinsed black beans and frozen corn. Stir everything together.
  6. Bring the mixture to a simmer. Reduce the heat to medium-low, cover the skillet, and cook for 10 to 12 minutes, or until the sweet potatoes are tender when pierced with a fork.
  7. Remove the lid. If using cheese, sprinkle it evenly over the top of the skillet mixture. Cover again briefly (about 1 minute) until the cheese melts.
  8. Serve the sweet potato skillet directly from the pan.

Notes

  • For a ground beef sweet potato skillet, substitute ground turkey with 1 pound of lean ground beef.
  • If you prefer a less spicy flavor, reduce the chili powder to 3/4 teaspoon.
  • This recipe works well with pre-diced sweet potatoes if you need to save prep time.
