Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. This temperature helps achieve a crispy skin.
  2. Scrub the sweet potatoes well under running water to remove any dirt. Dry them completely with a paper towel. Moisture creates steam, which prevents crisping.
  3. Prick each sweet potato deeply 4 to 6 times all over using a fork. This allows steam to escape during baking.
  4. Rub the exterior of each potato lightly with olive oil. This aids in skin crisping and flavor.
  5. Sprinkle the entire surface of each potato evenly with coarse sea salt and black pepper.
