Prepare this creamy, high protein chia seed pudding the night before for a simple, make-ahead breakfast or snack.

  • 1/4 cup chia seeds
  • 1/2 cup milk (dairy or non-dairy)
  • 1/2 cup plain yogurt (dairy or vegan)
  • 12 teaspoons maple syrup or honey (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a jar or container, combine the chia seeds, milk, yogurt, sweetener (if using), vanilla extract, and salt.
  2. Stir the mixture well for about one minute to prevent the chia seeds from clumping at the bottom.
  3. Cover the container and place it in the refrigerator for at least 4 hours, or preferably overnight.
  4. Before serving, check the consistency. If it is too thick, stir in a tablespoon of milk or water until you reach your desired texture.
  5. Serve cold with your favorite toppings.

Notes

  • For a vegan option, use a plant-based yogurt like almond or coconut yogurt.
  • To boost protein, use Greek yogurt or a high-protein dairy milk.
  • Add 1/4 cup of mashed banana or berries before chilling for natural sweetness and flavor.
  • If you prefer a thinner pudding, increase the milk slightly. If you want it very thick, reduce the milk by one tablespoon.
