  • 3 cups cooked, shredded chicken (rotisserie chicken works well)
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup shredded cheddar cheese, plus 1/2 cup for topping
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 1 sleeve (about 1 sleeve, 1.5 sleeves total) buttery crackers (like Ritz), crushed
  • 6 tablespoons butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the shredded chicken, softened cream cheese, sour cream, cream of chicken soup, 1 cup of cheddar cheese, garlic powder, and onion powder. Mix until all ingredients are fully combined and the mixture is creamy. Season with salt and pepper.
  3. Spread the chicken mixture evenly into the prepared baking dish.
  4. In a separate small bowl, mix the crushed buttery crackers with the melted butter until the crumbs are evenly coated.
  5. Sprinkle the remaining 1/2 cup of cheddar cheese over the chicken mixture. Then, evenly distribute the buttery cracker topping over the cheese layer.
  6. Bake for 25 to 30 minutes, or until the casserole is bubbly around the edges and the topping is golden brown.
  7. Let the casserole rest for 5 to 10 minutes before you serve it.

  • You can prepare this casserole completely, cover it, and refrigerate it up to 24 hours before baking. Add about 10 to 15 minutes to the baking time if cooking straight from the refrigerator.
