1 pound lasagna noodles
1 tablespoon olive oil
1 pound ground beef or turkey
1 medium onion, chopped
2 cloves garlic, minced
2 (28 ounce) cans crushed tomatoes
1 (15 ounce) can tomato sauce
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1 (16 ounce) container cottage cheese
1 large egg, lightly beaten
1/4 cup grated Parmesan cheese
4 cups shredded mozzarella cheese, divided
Instructions
Cook lasagna noodles according to package directions until al dente. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Add ground meat and cook until browned. Drain excess fat.
Add onion and cook until soft, about 5 minutes. Add garlic and cook for 1 minute more.
Stir in crushed tomatoes, tomato sauce, basil, oregano, salt, and pepper. Bring to a simmer, then reduce heat to low and cook for 15 minutes, stirring occasionally. This is your meat sauce.
In a medium bowl, combine the cottage cheese, egg, and Parmesan cheese. Mix well.
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
Spread a thin layer of meat sauce on the bottom of the prepared baking dish.
Arrange one layer of cooked noodles over the sauce.
Spread half of the cottage cheese mixture evenly over the noodles.
Sprinkle one-third of the mozzarella cheese over the cottage cheese layer.
Spoon half of the remaining meat sauce over the mozzarella.
Repeat the layers: noodles, remaining cottage cheese mixture, one-third of the mozzarella, and the rest of the meat sauce.
Top with the final layer of noodles and the remaining mozzarella cheese.
Bake for 30 minutes, or until the cheese is melted and bubbly. Let the lasagna rest for 10 minutes before slicing and serving.
Notes
Using cottage cheese provides a higher protein option for your baked pasta.
You can substitute ground turkey for ground beef for a lighter meal.
For a quicker assembly, use no-boil lasagna noodles.
