  • 1 cup cooked, shredded chicken (optional, omit for vegetarian)
  • 1 tablespoon butter
  • 1/4 cup freshly grated Parmesan cheese
  • Salt and black pepper, to taste
  • Zest of 1 lemon
  • 1 tablespoon fresh lemon juice
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Sauté for 5 to 7 minutes until the vegetables soften.
  2. Pour in the chicken broth. Bring the mixture to a gentle boil, then reduce the heat to maintain a simmer.
  3. If using chicken, add the shredded chicken now.
  4. Stir in the pastina pasta. Cook for about 7 to 8 minutes, stirring occasionally to prevent sticking, until the pasta is tender.
  5. Turn off the heat. Stir in the butter and Parmesan cheese until they melt into the broth.
  6. Stir in the lemon zest and lemon juice. Season with salt and pepper to your preference.
