2 ripe bananas, sliced
1/4 cup granulated sugar
2 tablespoons water
1/4 cup heavy cream (or full-fat coconut milk for dairy-free)
1 teaspoon vanilla extract
1/2 cup strong brewed espresso or cold brew concentrate
1 cup milk (dairy or alternative)

Instructions
Prepare the caramelized banana sauce: Combine the sliced bananas, sugar, and water in a small saucepan over medium heat.
Cook the mixture, stirring occasionally, until the sugar dissolves and the bananas soften and begin to brown, about 8 to 10 minutes. The mixture should thicken into a sauce.
Remove the pan from the heat. Stir in the heavy cream and vanilla extract. Let the sauce cool slightly.
For the banana cream component: Scoop 2 tablespoons of the cooled caramelized banana sauce into a separate small bowl. Whisk in 1/4 cup of your chosen milk until fully combined and smooth. Set aside.
Assemble the latte: In a tall glass, add ice cubes. Pour in the espresso or cold brew concentrate.
Add the remaining milk to the glass.
Gently spoon the remaining caramelized banana sauce mixture over the top of the milk.
Top the drink with the prepared banana cream mixture. Serve immediately.
Notes
For a dairy-free banana latte, use oat milk or almond milk and full-fat coconut milk for the cream component.
If you prefer a simpler flavor, you can make a banana simple syrup instead of caramelizing the fruit; combine 1/2 cup mashed banana, 1/2 cup water, and 1/2 cup sugar, simmer until dissolved, and strain.
Use a medium roast or dark roast espresso for the best coffee pairings with the banana sweetness.
