  • 2 (6 ounce) salmon fillets
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 cup fresh dill, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lemon, sliced for garnish

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. Pat the salmon fillets dry with a paper towel. Place them on the prepared baking sheet.
  3. In a small bowl, whisk together the olive oil, lemon juice, oregano, and garlic powder.
  4. Brush the oil mixture evenly over the top of each salmon fillet.
  5. Sprinkle the salt, pepper, and chopped fresh dill over the fillets.
  6. Bake for 12 to 15 minutes, or until the salmon flakes easily with a fork. Cooking time depends on the thickness of your fillets.
  7. Garnish with fresh lemon slices before serving.

Notes

  • For a more intense Mediterranean flavor, add 1 tablespoon of chopped Kalamata olives to the top before baking.
  • You can substitute dried dill for fresh, but use only 1 teaspoon of dried dill.
