Prepare this quick, protein-packed fried egg quesadilla in under ten minutes. This recipe focuses on achieving a crispy tortilla and a perfectly cooked egg with a runny yolk, making it an easy tortilla sandwich or a great breakfast quesadilla recipe.

  • 2 large flour tortillas
  • 2 large eggs
  • 1 tablespoon butter or oil
  • 1 cup shredded Monterey Jack or cheddar cheese
  • 1 teaspoon hot sauce (optional)
  • Pinch of salt
  • Pinch of black pepper

Instructions

  1. Place a non-stick skillet over medium heat. Add half the butter or oil.
  2. Crack one egg into the skillet. Season with salt and pepper. Cook the egg until the whites are set but the yolk is still runny, about 2 to 3 minutes. Remove the egg and set it aside. Repeat with the second egg.
  3. Wipe the skillet clean if needed, or use the same one. Return the skillet to medium heat. Place one tortilla in the skillet.
  4. Sprinkle half the cheese evenly over the tortilla. Place the cooked fried egg on top of the cheese. Drizzle with hot sauce if using.
  5. Top with the remaining cheese and cover with the second tortilla.
  6. Cook for 2 to 3 minutes until the bottom tortilla is golden brown and the cheese begins to melt.
  7. Carefully flip the quesadilla using a large spatula. Cook for another 2 to 3 minutes until the second side is golden brown and the cheese is fully melted. This is a great stovetop quesadilla method.
  8. Remove from the skillet, slice in half, and serve immediately for a cheesy egg tortilla hack.

Notes

  • For a crispier exterior, press down gently on the top tortilla with a spatula while cooking.
  • If you prefer a firm yolk, cook the egg slightly longer before assembling the quesadilla.
  • This recipe works well as a breakfast taco alternative if you cut the finished quesadilla into wedges.
