Learn the simple, no-foil method to bake perfect sweet potatoes in the oven, resulting in a soft, fluffy interior and a slightly caramelized, crisp skin. This is a straightforward, healthy side dish for any meal.

Ingredients

Scale
  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon coarse salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil for easy cleanup.
  2. Scrub the sweet potatoes well under running water to remove any dirt. Pat them completely dry with a paper towel.
  3. Pierce each sweet potato deeply 6 to 8 times all over using a fork or a sharp knife. This allows steam to escape and prevents bursting.
  4. Rub the entire surface of each potato with olive oil. Sprinkle evenly with coarse salt and black pepper.
  5. Place the prepared sweet potatoes directly onto the prepared baking sheet. Do not wrap them in foil; direct heat helps crisp the skin.
  6. Bake for 45 to 60 minutes. The exact time depends on the size of your potatoes.
  7. Check for doneness by squeezing the potato gently; it should yield easily, or insert a thin knife into the center with no resistance.
  8. Remove from the oven. Let them cool for 5 minutes before slicing them open lengthwise down the middle. Gently fluff the inside flesh with a fork.
  9. Serve immediately with your favorite toppings.

Notes

  • For extra crispy skin, place the potatoes directly on the oven rack instead of a baking sheet, but place the sheet underneath to catch any drips.
  • If you prefer a sweeter flavor, skip the salt and pepper and instead rub the skin lightly with coconut oil and a pinch of cinnamon before baking.
  • Toppings like cinnamon butter, toasted pecans, or a dollop of Greek yogurt work well for a simple dinner side.
