  • 1/4 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a mini muffin pan or line it with paper liners.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt.
  3. In a separate small bowl, whisk the egg, milk, and vanilla extract until they are combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined; do not overmix.
  5. Fold in the finely chopped apples until they distribute evenly throughout the batter.
  6. Spoon the batter into the prepared mini muffin cups, filling each about two-thirds full.
  7. Bake for 12 to 15 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.
  8. While the bites cool slightly, prepare the glaze. Whisk together the powdered sugar, 1 tablespoon of milk, and vanilla extract until smooth. Add more milk, half a teaspoon at a time, until you reach a drizzling consistency.
  9. Remove the apple fritter bites from the pan and place them on a wire rack. Drizzle the cinnamon glaze over the warm bites.
  10. Serve warm or at room temperature.
