Ingredients
Scale
200g high-quality dark chocolate, chopped
100ml heavy cream
50g unsalted butter
1 tablespoon powdered sugar
250g fresh strawberries, hulled and sliced
100g crushed digestive biscuits or graham crackers
2 tablespoons melted butter (for crust)
Instructions
Prepare the chocolate layer: Place the chopped dark chocolate in a heatproof bowl. Heat the heavy cream in a small saucepan until just simmering. Pour the hot cream over the chocolate. Let it sit for two minutes, then stir until smooth to create a ganache. Set aside to cool slightly.
Prepare the base: In a separate bowl, mix the crushed biscuits with 2 tablespoons of melted butter until combined.
Assemble the cups: Divide the biscuit mixture evenly among four small serving glasses or cups to form the base layer. Press down lightly.
Add the strawberries: Arrange half of the sliced strawberries around the inside edge of each cup for presentation. Place the remaining sliced strawberries on top of the biscuit base.
Layer the chocolate: Gently pour the slightly cooled chocolate ganache over the strawberries in each cup, filling them about two-thirds full.
Chill: Refrigerate the cups for at least 2 hours, or until the chocolate layer is firm.
Finish: Before serving, top each Dubai Chocolate Strawberry Cup with a dollop of whipped cream (if desired) and a whole strawberry for garnish.
Notes
Use chocolate with at least 60% cocoa solids for the best flavor profile in this rich chocolate mousse with strawberries.
For a quicker set, place the cups in the freezer for 30 minutes after pouring the chocolate layer.
You can substitute the biscuits with crushed shortbread cookies for a different texture in this sweet strawberry chocolate cup.
