Instructions

  1. Drain the pickle slices thoroughly and pat them completely dry with paper towels. This step is key for crispiness.
  2. In a shallow dish, whisk together the flour, salt, pepper, paprika, garlic powder, and cayenne pepper.
  3. In a second shallow dish, whisk the egg and milk together until combined.
  4. In a third shallow dish, place the panko breadcrumbs.
  5. Dredge each pickle slice first in the flour mixture, shaking off any excess.
  6. Dip the floured pickle into the egg mixture, allowing excess to drip off.
  7. Coat the pickle completely in the panko breadcrumbs, pressing gently to adhere. Place coated pickles on a clean plate.
  8. In a deep, heavy-bottomed pot or deep fryer, heat about 2 inches of vegetable oil to 375°F (190°C). Use a thermometer to monitor the temperature.
  9. Carefully place pickles into the hot oil in small batches, ensuring not to overcrowd the pot.
  10. Fry for 1 to 2 minutes per side, until golden brown and crisp.
