  • 1 pound low-moisture mozzarella cheese, cut into 1-inch thick sticks
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 cup regular breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked, shredded chicken breast
  • 1/2 cup buffalo wing sauce (use your favorite brand)
  • 1/4 cup all-purpose flour (for dredging)
  • Vegetable oil, for frying (or cooking spray for air fryer)

Instructions

  1. Prepare the chicken filling: In a small bowl, mix the shredded chicken with the buffalo wing sauce until fully coated. Set aside.
  2. Prepare the breading stations: Set up three shallow dishes. Place the 1 cup flour, garlic powder, onion powder, salt, and pepper in the first dish and mix well. Place the beaten eggs in the second dish. Mix the panko breadcrumbs and regular breadcrumbs in the third dish.
  3. Freeze the cheese: Place the mozzarella sticks on a parchment-lined tray and freeze for at least 1 hour. This prevents them from melting out during cooking.
  4. Double bread the sticks: Take the frozen mozzarella sticks and dredge each one first in the seasoned flour, shaking off excess. Dip into the egg wash, letting excess drip off. Then, coat thoroughly in the breadcrumb mixture. Repeat this entire process (flour, egg, breadcrumbs) for a double breading, which creates the ultimate crispy exterior. Place sticks back on the tray and freeze for another 30 minutes.
  5. Cook the sticks: For deep frying, heat 2 inches of oil to 350°F (175°C). Fry the sticks in batches for 2-3 minutes until golden brown and crispy. Drain on a wire rack lined with paper towels.
  6. For air frying, lightly spray the breaded sticks with cooking spray. Air fry at 380°F (195°C) for 8-10 minutes, flipping halfway through, until golden and crisp.
  7. Assemble the buffalo sticks: Once the mozzarella sticks are cooked, gently toss them in a bowl with the prepared buffalo chicken mixture, ensuring they are coated but not saturated.
  8. Serve immediately with your choice of dipping sauce.
