  • 1 pound cheese ravioli
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1/2 cup chicken broth (or vegetable broth)
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Cook the ravioli according to package directions until tender. Drain and set aside. Reserve about 1/2 cup of the pasta cooking water.
  2. While the ravioli cooks, heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 4 minutes.
  3. Add the minced garlic and chopped sun-dried tomatoes to the skillet. Cook for 1 minute until the garlic is fragrant.
  4. Pour in the chicken broth and let it simmer for 2 minutes, scraping up any browned bits from the bottom of the pan.
  5. Reduce the heat to low. Stir in the heavy cream and bring the sauce to a gentle simmer. Do not boil.
  6. Stir in the Parmesan cheese until the sauce is smooth. If the sauce is too thick, add a splash of the reserved pasta water.
  7. Add the fresh spinach to the sauce. Stir gently until the spinach wilts completely, about 2 minutes.
  8. Season the sauce with salt and pepper.
  9. Gently fold the cooked ravioli into the creamy Tuscan sauce until everything is coated.
  10. Serve immediately for a luscious cream sauce pasta experience.

  • For a heartier meal, brown 1/2 pound of Italian sausage before adding the onion and proceed with the recipe.
