  • 12 ounces pasta (fettuccine or penne)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 pound cremini mushrooms, sliced
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and roughly chopped
  • 1/2 teaspoon dried Italian seasoning
  • 1/4 teaspoon red pepper flakes
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 4 ounces cream cheese, cubed
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 5 ounces fresh spinach
  • Salt and black pepper to taste

Instructions

  1. Cook pasta according to package directions until al dente. Reserve 1 cup of the starchy pasta water before draining.
  2. While the pasta cooks, heat olive oil and butter in a large skillet over medium-high heat. Add the sliced mushrooms and cook until they release their moisture and turn golden brown, about 6 to 8 minutes.
  3. Add the minced garlic, chopped sun-dried tomatoes, Italian seasoning, and red pepper flakes to the skillet. Cook for 1 minute until the garlic is fragrant.
  4. Pour in the vegetable broth and let it simmer for 2 minutes, scraping up any browned bits from the bottom of the pan.
  5. Reduce the heat to medium-low. Stir in the heavy cream and cubed cream cheese. Whisk gently until the cream cheese has melted completely and the sauce is smooth.
  6. Stir in the Parmesan cheese until the sauce thickens slightly. Season with salt and pepper.
  7. Add the fresh spinach to the sauce, stirring until it wilts completely, about 2 minutes.
  8. Add the drained pasta to the skillet. Toss everything together to coat the pasta evenly. If the sauce seems too thick, add the reserved pasta water, one splash at a time, until you reach your desired creamy consistency.
  9. Serve immediately with extra Parmesan cheese on top.

Notes

  • For a richer sauce, substitute half of the heavy cream with half-and-half.
  • If you want to add protein, cook 1 pound of diced chicken breast or shrimp in the skillet before adding the mushrooms.
  • To achieve the best creamy texture, make sure the cream cheese is at room temperature before adding it to the sauce.
