  • 1 cup (200g) packed light brown sugar
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 1/4 cups (270g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups (255g) semi-sweet chocolate chips
  • 1 cup (170g) powdered sugar (for frosting)
  • 1/4 cup (57g) unsalted butter, softened (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 12 tablespoons milk (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 12-inch round pizza pan or a 10-inch springform pan.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Fold in the chocolate chips.
  7. Press the cookie dough evenly into your prepared pan.
  8. Bake for 20 to 25 minutes, or until the edges are golden brown and the center is set but still slightly soft for a chewy texture.
  9. Let the cookie cake cool completely in the pan on a wire rack before frosting.
  10. To make the frosting, beat the softened butter until smooth. Gradually add the powdered sugar, vanilla extract, and 1 tablespoon of milk. Beat until creamy. Add the remaining milk if the frosting is too stiff.
  11. Spread the buttercream frosting evenly over the cooled cookie cake. Decorate with extra chocolate chips or sprinkles as desired.
