  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Place the cottage cheese and egg yolks into a food processor or blender. Blend until the mixture is completely smooth and creamy. Scrape down the sides as needed.
  3. In a separate, clean, dry bowl, beat the egg whites with the cream of tartar using an electric mixer until stiff peaks form. The peaks should hold their shape when you lift the beaters.
  4. Gently fold one-third of the stiff egg whites into the cottage cheese mixture to lighten it.
  5. Carefully fold in the remaining egg whites in two additions until just combined. Do not overmix; maintaining the air is key for fluffy results.
  6. Spoon six equal mounds of the batter onto the prepared baking sheet. Gently shape them into round or oval bread shapes.
  7. Bake for 25 to 30 minutes, or until the tops are golden brown and the bread feels set.
