Make these chewy cookies that taste just like your favorite nostalgic breakfast cereal, featuring a sweet cinnamon swirl and a simple glaze.

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup finely crushed Cinnamon Toast Crunch cereal (plus extra for topping)
  • 1 tablespoon ground cinnamon
  • 1/2 cup powdered sugar (for glaze)
  • 2 tablespoons milk or cream (for glaze)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then mix in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, salt, ground cinnamon, and the 1/2 cup of crushed cereal.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Scoop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
  7. Bake for 9 to 11 minutes, or until the edges are lightly golden brown and the centers are still soft.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  9. While the cookies cool, prepare the glaze: Whisk together the powdered sugar and milk until smooth.
  10. Drizzle the glaze over the cooled cookies. Immediately sprinkle a small amount of extra crushed cereal on top of the wet glaze for texture.

Notes

  • For the best flavor replication, use fresh ground cinnamon.
  • If you want a chewier cookie, slightly underbake them by one minute.
