Make this rich, gooey Chocolate Bourbon Pecan Pie for a showstopper holiday dessert. It combines dark chocolate, crunchy pecans, and a warm bourbon flavor in a flaky crust.

  • 1 (9-inch) unbaked homemade pie crust
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup light corn syrup
  • 1/2 cup bourbon
  • 1 teaspoon vanilla extract
  • 3 large eggs, lightly beaten
  • 1/2 cup unsweetened cocoa powder
  • 1 cup semi-sweet chocolate chips
  • 1 1/2 cups pecan halves

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Place your unbaked pie crust into a 9-inch pie plate.
  2. In a large bowl, whisk together the granulated sugar and brown sugar.
  3. Add the melted butter, corn syrup, bourbon, and vanilla extract to the sugar mixture. Whisk until combined.
  4. In a separate small bowl, whisk the eggs and cocoa powder together until smooth.
  5. Gradually whisk the egg and cocoa mixture into the wet ingredients until fully incorporated.
  6. Stir in the chocolate chips.
  7. Pour half of the filling into the prepared pie crust. Sprinkle half of the pecan halves evenly over the filling.
  8. Pour the remaining filling over the pecans. Top with the remaining pecan halves.
  9. Bake for 50 to 60 minutes, or until the edges are set and the center has a slight jiggle.
  10. Let the pie cool completely on a wire rack before slicing. This allows the gooey filling to set properly.

Notes

  • For a flakier crust, chill the pie dough for at least 30 minutes before lining the pie plate.
  • You can substitute dark corn syrup for light corn syrup if you prefer a deeper color in the filling.
  • If you want to reduce the alcohol flavor, you can reduce the bourbon to 1/4 cup and add 1/4 cup of strong brewed coffee.
  • Bake this pie on a baking sheet to catch any potential drips.
