  • 1 tablespoon sesame oil
  • 1 pound ground chicken
  • 1 teaspoon ground ginger
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 (14.5 ounce) bag coleslaw mix (shredded cabbage and carrots)
  • 1/4 cup low sodium soy sauce (or tamari for gluten free)
  • 2 tablespoons rice vinegar
  • 1 tablespoon brown sugar or keto sweetener equivalent
  • 1 teaspoon sriracha (optional)
  • 1/4 cup water or chicken broth
  • 2 green onions, sliced, for garnish
  • 1 tablespoon sesame seeds, for garnish

Instructions

  1. Heat the sesame oil in a large skillet or wok over medium-high heat.
  2. Add the ground chicken to the skillet. Break it up with a spoon and cook until browned, about 5 to 7 minutes. Drain off any excess liquid.
  3. Stir in the ground ginger, garlic powder, and black pepper with the chicken. Cook for 1 minute until fragrant.
  4. Add the coleslaw mix to the skillet. Stir and cook until the cabbage begins to wilt, about 3 to 5 minutes.
  5. In a small bowl, whisk together the soy sauce, rice vinegar, brown sugar or sweetener, sriracha (if using), and water or broth to create the simple homemade egg roll sauce.
  6. Pour the sauce over the chicken and cabbage mixture. Stir well to coat everything evenly.
  7. Continue to cook for 2 to 3 minutes, allowing the sauce to thicken slightly.
  8. Remove from heat. Divide the mixture into bowls. Garnish with sliced green onions and sesame seeds before serving.
