  • 2 pounds russet potatoes, diced small
  • 3 tablespoons cooking oil
  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 1 cup water
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Salt and pepper to taste
  • Optional toppings: sour cream, salsa, chopped cilantro

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced potatoes with oil, salt, and pepper on a large, oven-safe skillet or baking sheet.
  3. Roast the potatoes for 20 minutes until they start to become tender.
  4. While potatoes roast, cook the ground beef in a separate pan over medium heat until browned. Drain any excess fat.
  5. Stir the taco seasoning and water into the cooked ground beef. Simmer for 5 minutes until the sauce thickens slightly.
  6. Remove the potatoes from the oven. Spread the seasoned ground beef mixture evenly over the potatoes in the skillet.
  7. Sprinkle both types of cheese over the beef and potato layer.
  8. Return the skillet to the oven and bake for another 10 to 15 minutes, or until the cheese is fully melted and bubbly.
  9. Remove from the oven and let it cool for 5 minutes before serving. Top with your preferred toppings.
