1 cup creamy peanut butter
1/2 cup unsalted butter, softened
3 cups powdered sugar
1 teaspoon vanilla extract
1 box graham crackers (about 12 full sheets)
12 ounces semi-sweet chocolate chips
1 tablespoon coconut oil or shortening
Instructions
Line a baking sheet with parchment paper. Set aside.
In a medium bowl, beat together the peanut butter and softened butter until smooth.
Gradually mix in the powdered sugar until fully combined, forming a thick peanut butter mixture. Stir in the vanilla extract.
Take one graham cracker sheet and break it in half to create two squares.
Form about 1 tablespoon of the peanut butter mixture into a ball. Flatten the ball slightly and place it between two graham cracker squares, pressing gently to form a sandwich. Repeat until all graham crackers and peanut butter mixture are used. You should have about 18-20 sandwiches.
Place the peanut butter graham cracker sandwiches on the prepared baking sheet. Place the sheet in the freezer for 15 minutes to firm up the filling.
While the sandwiches chill, prepare the chocolate coating. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring well after each interval, until the chocolate is smooth and fully melted.
Remove the chilled sandwiches from the freezer. Dip each sandwich into the melted chocolate, allowing excess chocolate to drip off. You can leave a small circle of the peanut butter filling exposed at the top to mimic a traditional buckeye candy look, or dip completely.
Return the coated crackers to the parchment-lined baking sheet.
Refrigerate the Buckeye Graham Crackers for at least 30 minutes, or until the chocolate is set.
Notes
For a cleaner dip, use a toothpick inserted into the side of the sandwich to lower it into the chocolate and lift it out.
If you want a firmer peanut butter layer, chill the formed peanut butter balls before sandwiching them between the crackers.
