Make this easy, fresh Bruschetta Dip featuring a creamy cheese base topped with marinated tomatoes, basil, and a balsamic drizzle. It is a simple, elegant appetizer perfect for any gathering.

  • 8 ounces cream cheese, softened
  • 4 ounces Boursin cheese (or other herbed cheese), softened
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 pound Roma tomatoes, diced small
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon balsamic glaze, for drizzling
  • Salt and black pepper to taste
  • Crackers, pita chips, or toasted baguette slices, for serving

Instructions

  1. In a medium bowl, combine the softened cream cheese, Boursin cheese, and Parmesan cheese. Mix until smooth and fully combined.
  2. Spread the creamy cheese mixture evenly into the bottom of a shallow serving dish or pie plate.
  3. In a separate small bowl, combine the diced tomatoes, chopped basil, minced garlic, olive oil, and balsamic vinegar. Season with salt and pepper. Stir gently to coat the tomatoes.
  4. Spoon the tomato mixture evenly over the cheese layer.
  5. Drizzle the top lightly with the balsamic glaze just before serving.
  6. Serve immediately with your choice of crackers, pita chips, or toasted baguette slices for dipping.

Notes

  • You can prepare the tomato topping up to 4 hours ahead of time and keep it refrigerated. Do not assemble the dip until just before serving to keep the crackers crisp.
  • For a slightly warm dip, bake the assembled dip at 350°F (175°C) for 10-15 minutes until the cheese is warm and slightly melted.
  • If you prefer a sharper flavor, substitute half the cream cheese with plain Greek yogurt or Neufchâtel cheese.
