Instructions

  1. Melt the butter in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables soften, about 5 to 7 minutes.
  2. Whisk in the flour to the softened vegetables and cook for 1 minute, stirring constantly to create a roux.
  3. Slowly whisk in the broth, ensuring no lumps form. Bring the mixture to a simmer.
  4. Add the broccoli florets, salt, pepper, and nutmeg. Cook until the broccoli is tender, about 10 minutes.
