2 cups fresh blueberries
2 ripe peaches, sliced or diced
4 ounces feta cheese, crumbled
1/2 cup pecans or walnuts, toasted
1/4 cup red onion, thinly sliced (optional)
Instructions
Prepare the dressing: In a small jar, combine 1/4 cup olive oil, 2 tablespoons balsamic vinegar, 1 teaspoon Dijon mustard, 1 teaspoon honey or maple syrup, salt, and pepper. Shake well to combine.
In a large bowl, place the mixed greens.
Add the blueberries, sliced peaches, and thinly sliced red onion (if using) to the greens.
Gently toss the salad ingredients together.
Sprinkle the crumbled feta cheese and toasted nuts over the top of the salad.
