  • 6 slices bacon, cooked crispy and crumbled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup celery, finely diced
  • 1/4 cup red onion, finely diced
  • 1/2 cup mayonnaise (or Greek yogurt for a lighter version)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/2 cup shredded iceberg lettuce, chopped (optional, for crunch)
  • 1 small avocado, diced (optional, for creaminess)

Instructions

  1. Place the cooked, shredded chicken in a medium bowl.
  2. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, and garlic powder. Season the dressing with salt and pepper.
  3. Add the crumbled bacon, halved tomatoes, diced celery, and diced red onion to the bowl with the chicken.
  4. Pour the dressing over the chicken mixture. Gently fold all ingredients together until everything is evenly coated.
  5. If using, gently fold in the chopped lettuce and diced avocado last to maintain texture.
