Bacon-Wrapped Dates with Goat Cheese

Prepare this simple, sweet and salty appetizer, often called Devils on Horseback, for a sophisticated finger food that requires minimal effort.

Ingredients

  • 12 Medjool dates
  • 4 ounces soft goat cheese or blue cheese
  • 12 strips thin-cut bacon
  • 12 toothpicks

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. Carefully slice each date lengthwise and remove the pit.
  3. Stuff the center of each date with a small amount of cheese.
  4. Wrap one half-strip of bacon around each stuffed date. Secure the bacon with a toothpick inserted through the date.
  5. Place the wrapped dates seam-side down on the prepared baking sheet.
  6. Bake for 15 to 20 minutes, turning halfway through, until the bacon is crisp and the dates are slightly caramelized.
  7. Remove from the oven and let cool for a few minutes before serving warm.

Notes

  • For easier assembly, you can recruit someone to help you wrap the dates.
  • If you prefer a less sweet flavor, use slightly firmer dates.
  • If you do not have thin-cut bacon, cut regular bacon strips in half lengthwise before wrapping.
