1 (8 ounce) wheel of brie cheese, cold
1 sheet frozen puff pastry, thawed
1 large egg, beaten (for egg wash)
2 tablespoons honey
1/4 cup chopped pecans
Pinch of sea salt
Instructions
Remove the rind from the top and bottom of the brie wheel. If the wheel is very thick, trim the sides slightly so the pastry can wrap easily. Place the brie in the freezer for 10 minutes to firm up slightly.
Thaw the puff pastry according to package directions. On a lightly floured surface, roll the pastry sheet slightly thinner into a square large enough to completely enclose the brie.
Brush the center of the pastry with a little of the beaten egg. Place the cold brie wheel in the center of the pastry.
Fold the pastry up and over the brie, trimming any excess dough so the edges overlap by about one inch. Pinch the seams tightly to seal the brie completely inside the pastry. Trim any excess dough from the top center.
Place the sealed pastry package seam-side down on a small plate. Brush the entire surface evenly with the remaining egg wash. This helps the pastry brown.
Chill the wrapped brie in the refrigerator for at least 15 minutes. This step is important to prevent the pastry from melting too fast in the air fryer.
Preheat your air fryer to 375 degrees Fahrenheit.
Carefully transfer the chilled brie package to the air fryer basket, ensuring it sits flat.
Air fry for 10 to 14 minutes. Check at 10 minutes; the pastry should be golden brown and puffed. If it is not brown enough, continue cooking in 2-minute intervals.
Remove the golden puff pastry cheese from the air fryer. Let it rest on a cutting board for 5 minutes before serving.
Just before serving, drizzle the top with honey and sprinkle with chopped pecans and a pinch of salt. Serve immediately with crackers or fruit slices.

Use high-quality puff pastry for the best texture.
Do not skip chilling the wrapped brie before air frying; this prevents leaks.
If the pastry browns too quickly, loosely tent the top with a small piece of aluminum foil for the last few minutes of cooking.
For flavor variations, substitute the pecans with dried cranberries or a teaspoon of fresh rosemary mixed with the honey.
